It is been more than a year since this thread exists and also there are posts in the suggestions (http://forum.thesettlersonline.com/threads/25330-Economy-Overview) however I have not seen any changes in the Granite placement in Economy Overview...

I think its a small issue for some minutes, maybe I'm wrong... On the second hand, they updates the Overview with beans and beanstalks + coins production from wheat. This should be harder to do...
However, after posting, I found something else - maybe they think its better to be the same because when you have opened both starting sections - building materials and food - then these sections perfectly fit into the window. With this change, 'bread' will not be seen.
