To my understanding upgrading and buffing a mine only increase the speed of output and not total amout produced.

Any good strategies out there for?

Copper?
Iron?
Gold?

Your understanding is incorrect, upgrading speeds the output and doubles the usage, but buffing will double the output without adjusting the consumption, therefore a mine with 1k deposit if upgraded will produce 1k ore, but buffed will produce 2k ore

As Munchie mentioned.

i personally just add buffs to copper and gold as i use the resource in quite a bit of chains, feel free to buff iron as you wish,
there isnt a common stradegy used for it, just buff something you need. do not upgrade mines though unless its a gold mine
as the other mines just do not have enough resources in them for it to be worthwhile. the only one i might come in to is coal, but not for me.

If you buff a copper mine, then it is very useful to upgrade it as well. The costs of the upgrade is less than the cost of the buffs you save.
Upgrading it once saves you 2-3 buffs. 2 buffs are worth > 5 coins. 50 tools are worth < 2 coins.
