Once I have bought all the specialists (6 generals, 3 explorers, 3 geologist) the tavern become completely useless? And is better to demolish it to save some building space, am I right?

Yes, and there's no need to have it up in between either.. Better build it, buy specialist and then demolish it.

There was a quest during the Xmas 2012 or the EotW event which required you to have a tavern, Can't remember the precise details but it was definitely one of those two event
