I already got the Recipe: Manuscript. But, I still want to do the Long Letters quest for free gems. So, what happens if I get more Recipes, or it guarantees that I get gems only?

After you have the recipe, you should only get gems in the box.

you'll get only gems. But if it's only gems you're after, you should do short letters.
