I've killed the golem 3 times now, and I didn't get anything for killing it more than once.
They respawn immediately after killing them, and they were all lvl 1.
To be clear, its not 3 hearts, its 3 whole golems, each with 3 hearts.
Will I be credited for more pumpkins or at least for the resources used?
You get pumpkins by completing the quest in you questbook, not by the actual killing of the golem.

To get the Reward of 10 Pumpkins you must complete the quests "Preparations", "Slippery Ground", "Practice Run", and "The Fire Brigade (Defeat Golem #1)" step by step and "Claim Reward" (under "The Golem" in the Server Quests heading of the Quest Book) when each step is done.
Since it is really quite easy to destroy him without ever opening the Quest Book at all you might try a ticket to Support about the resources at least but I've no idea what they'll say.

Followed the link above - and you should get pumpkins for every golem you kill.
1st Golem
1,000 - Heart 1 (Orange)
1,500 - Heart 2 (Red)
2,000 - Heart 3 (Purple)
Reward: 10 Pumpkin
There is quest chain for this Golem in the Quest Book, remember to "Claim Reward" after each step. When this 1st Golem is defeated you have helped reach the server goal, all other Golems are just for fun. (And Pumpkins.) Don't panic if a new Golem doesn't pop up immediately, when a Golem is defeated a new one appears in two days.
2nd Golem
1,500 - Heart 1 (Orange)
2,250 - Heart 2 (Red)
3,000 - Heart 3 (Purple)
Reward: 20 Pumpkin
3rd Golem
3,000 - Heart 1 (Orange)
4,000 - Heart 2 (Red)
6,000 - Heart 3 (Purple)
Reward: 30 Pumpkin
4th Golem
12,000 - Heart 1 (Orange)
18,000 - Heart 2 (Red)
24,000 - Heart 3 (Purple)
Reward: 40 Pumpkin
5th Golem+
60,000 - Heart 1 (Orange)
90,000 - Heart 2 (Red)
120,000 - Heart 3 (Purple)
Reward: 50 Pumpkin
The first is the sticky one NixMan, there are steps in the quests that must be completed to get to the final "Defeat him", that's the one that gives the rewards. The quest to "Defeat" is the only quest attached to later Golems so they can't get stuck and repeat, but the first one can. With the later Golems you must also "Claim Reward" after defeating one to get the Pumpkins.
That post in the guide could use a brush-up though, so it's clearer.
Ah ha. Yes - found this :
After the Golem is killed, the next one will show up on the home island after two days. Please note that while the tutorial quest related to the Golem is not finished, the Golem re-spawns faster.
I managed to kill mine quickly with just the marbles. What am I supposed to do with the ropes & water buckets?
