This maybe a daft question but why are there trades for for example a water wheel for large amounts of resource or GC when they be bought for 800 or so gems if they are cashed they only work out at 200 GC.

Short answer: Supply and demand.
A longer answer would show how much these 895 gems are actually worth,
whether in real-money, or, if not spending any, in game-time.
The latter would be 9 straight weeks without missing a day.
