you only get 1 chance to place a gem pit so best to plan ahead
+1 I don't understand why it is not movable, maybe because it is consumed so moving it could be a problem (like resetting the amount to original), like Nurseries not movable as well, but it is still worth to implement it as movable.
The current structure of the building is not storing the amount inside it, it is just a level and is ti tradable or not, the type and so on., but that attribute seriously not an issue to implement I think ...

I think the logic behind it is you cant move a well or a field as they are stationary so the gem pit works on same principle as how can you move a hole in the ground or a field ?
I woulnt know about nurseries as i dont have one of them on my island.

There is nothing about moving in the description of gem pits in merchant or in the "great settler library" on the forum.
It's not a building, it's a great big hole in the ground so I don't think it should be movable.

I can't see this ever happening. Gem pits are not movable for the same reason wheat fields and wells are not movable. If an item is movable, then there is no reason why it can't be placed back in the star menu.
For those that have been here long enough, you will remember the issue there was when one of the wheat fields (or wells, I forget which) from an event could be placed back in to the star menu. It would automatically be refilled to its maximum capacity. With the current way that the star menu now stacks all buildings, which it didn't before, then the suggestion here could easily be abused. If all the gem pits were stacked in the star menu, the system wouldn't be able to keep track of which pit had n-number of gems and they would all be treated the same. Result? All gem pits in the star menu would be refilled to maximum again. Rinse and Repeat every few weeks to keep all gem pits full.
Blue Byte would never allow that.
Just to add to Daz's excellent reply: Gem Pits are meant to be viewed as a long-term investment, and their placement rules reflect this. Besides, it's a giant pit - you're going to need to empty it before you fill it over!
