We are soon to go on holiday, does the game keep going while we are away? Going to try and top levels up before we go and put everything to sleep (my settler need holiday too).

Your island will continue ticking along for 24 hours and then go into stasis, ready to return to once you get back from holiday.
If some in-game friend should visit your island and buff you during your absence, your island will once again restart and tick along for another 24 hours.
You can rest assured that your island will still be here when you get back. I would advise just leaving everything running though, so your storehouses are full of resources when you get back. You can easily fix the fully depleted deposits then and get things back up and balanced again.
