Is the value on the stone mason site the amount to be mined, i have looked at upping production on marble but it seems to be more than there is to be mined!

This is my understanding of the way stone and marble masons work:
From a quarry they extract 1 unit of stone/marble during each cycle for each level they are. So a level 3 mason will extract 3 stones/marble from a quarry each cycle.
Stone masons have a 5 minute production time and marble masons 9 minutes. Add in travelling time to the storehouse and you get approximately 6 minutes stone and 10 minutes marble turnaround times. This equates to approximately 10 cycles per hour for stone and 6 for marble. Multiply this by the level of the mason and you get the approximate extraction rate per hour.
A top-level 6 marble mason will therefore extract about 36 marble per hour which is about 864 per day. If the nearest quarry gets depleted the production rate slows until if there are no quarries left you get the red plink signalling working in trouble!
Buffing will increase the production at the same extraction rate.

And in answer to your actual question the number of stones or marble which is displayed in the resource is the amount which can be quarried before the resource gets depleted, after which you need to search for another one with a geologist
